Veg Cutlet Recipe | Make Vegetable cutlet at home

Here’s a wonderful recipe for crispy and delicious Veg Cutlet Recipe that are perfect as a healthy snack or appetizer for parties. These cutlets can be made with boiled potatoes and mixed vegetables, making them suitable for both vegetarians and vegans. Whether you choose to deep fry, shallow fry, or even air-fry them, these cutlets are sure to be a hit with kids and adults alike!

Ingredients:

  • 2 Boiled Potatoes
  • 1 Boiled Carrot
  • 2 tbsp Chopped Capsicum (optional)
  • 1 Green Chili (finely chopped)
  • 1 Onion (finely chopped)
  • 10 Broken Cashews
  • 1 tsp Ginger Garlic Paste
  • 1/2 tsp Roasted Cumin Powder
  • 1 tsp Garam Masala Powder
  • 1/2 tsp Red Chili Powder
  • 1/4 tsp Chat Masala or Aamchoor Powder (optional)
  • 1/4 tsp Turmeric Powder
  • 1 tsp Tomato Sauce
  • Salt (as needed)
  • 3/4 cup + 1 cup Bread Crumbs
  • 2 tbsp Corn Flour or Maida
  • 1 tsp Lemon Juice
  • 2 tbsp Coriander Leaves (finely chopped)
  • Cooking Oil (to fry)

Instructions:

  1. Wash and pressure cook potatoes, carrots, and green peas.
  2. Peel the skin of the potatoes and place them in a bowl. Add boiled carrot and green peas.
  3. Add the spice powders, chopped onion, green chili, coriander leaves, ginger garlic paste, tomato sauce, cashews, and salt.
  4. Mash everything well and add 1/2 to 3/4 cup of bread crumbs and 2 tbsp of rice flour or powdered poha to make a non-sticky dough.
  5. Make a paste with Maida (corn flour) by adding some water and keep the bread crumbs ready in another bowl.
  6. Take the dough and shape it into round, heart, or oblong shapes. Dip each cutlet in the Maida paste and then in the bread crumbs. Arrange them on a plate.
  7. For shallow frying the cutlets, heat a dosa pan with oil and cook 3 to 4 cutlets at a time over medium flame until they turn golden brown on both sides.
  8. For deep frying, heat oil in a kadai and fry the cutlets on both sides till they become crispy and golden. Remove them on a tissue.
  9. Serve the hot and crispy Vegetable Cutlets with tomato sauce or ketchup. If you prefer, you can also air-fry the cutlets for a healthier option.

Note:

  • For calorie-conscious individuals, you can opt for shallow frying or air-frying the cutlets.
  • You can shape and prepare the cutlets in advance for parties by dipping them in Maida paste and bread crumbs. Store them in a covered tray or a Ziplock bag in the refrigerator until frying.
